Ingredients
Instructions
  1. Mix 1 1/4 cups hot water with 1 Via packet
  2. Make cupcakes according to box directions except use coffee in place of water.
  3. Allow cupcakes to cool
  4. Cut a small hole in the top of each cupcake and remove a chunk from the middle of the cupcake.
  5. Pour a small amount of caramel sauce into the middle of each cupcake.
  6. Place the top of the chunk of cupcake removed back into each hole.
  7. Cream butter and 1 packet of Via in a bowl. I don’t have a mixer so I creamed the butter by hand. First grate butter into a bowl to soften it and mix butter with a wooden spoon.
  8. Slowly add in the powdered sugar and milk as needed until everything is incorporated and the frosting is the right consistency.
  9. Transfer the frosting to a piping bag
  10. Ice each cupcake and drizzle the tops with caramel sauce
